Berry Custard

This healthy berry custard is really easy to make and a very healthy option for your kids.

Ingredients:

1/4 cup sugar
2 teaspoons cornstarch
1 cup fat-free milk
1 beaten egg
2 tablespoons light dairy sour cream
1/2 teaspoon vanilla
3 cups fresh raspberries, blackberries, blueberries, or halved strawberries

Spinach Lasagna

Ingredients:

1 lb Monterey Jack cheese, grated
8 oz lasagna noodles
2 pkgs frozen spinach, thawed and drained
1 c Parmesan cheese
2 lbs cottage cheese
2 eggs
1 T parsley, chopped
½ softened butter
Salt, pepper and garlic powder to taste
