It seems more and more you hear about people who have an allergy to wheat. If your child is one of those people, you know how important it is adjust their diet so they don’t have a problem. Since most store-bought goodies are made with wheat, here are some home-made wheat-free treats for lunch boxes.
Wheat-Free Brownies

Spaghetti with Spinach Sauce

Spaghetti with Spinach Sauce
(Serves 4 to 5 people)

Ingredients:
1 lb spaghetti
2 cups spinach
1 cup vegetable broth
½ cup grated Parmesan cheese
¼ cup butter
½ cup milk

Homemade Fish Fingers

Ingredients:
1 lb fish fillets
1/3 cup bread crumbs
1/3 cup grated Parmesan cheese
1 egg, beaten
½ tsp paprika
½ tsp dried parsley
1 tbsp butter, melted

Instructions:
Preheat oven to 450 ºF.

Healthy White Bean Dip

Ingredients:
1 can (19oz) white kidney beans, drained and rinsed
1 tbsp lemon juice
1 tbsp olive oil
½ tsp dried oregano, crumbled
1 clove garlic, pressed
½ tsp salt
¼ tsp pepper
Handful of freshly chopped parsley

Crunchy Apple Burgers

Crunchy Apple Burgers
(Makes about 5 burgers)

Ingredients:
1 tart apple, grated
1 cup onion, minced
2 cups cooked brown rice (or white)
2 cups bread crumbs
1 green pepper, seeded and finely chopped
1 tbsp fresh ginger, minced
6 tbsp rolled oats
2 Tbsp vegetable oil
½ tsp salt
Black pepper
